
The Artist Life!
It’s been a while since I’ve had access to a kitchen, with the ability to cook for myself, and I’m not wasting any time. Food for the Table posts have been few and far between here over the past year, since we’ve been locked down. Right now I have a two week stay at a friend’s house while they have a two week stay at another friend’s house. It’s been a game of musical houses this week, and I’m happy to play.
My foodie stay started out quite simply – a simple Breakfast Quesadilla. It was intended to be just two corn tortillas with melted cheese in the middle. But as the cheese was melting I decided to get fancy and sauteed some spinach, scrambled an egg, and slivered up part of a roma tomato. This one happened to get folded in half and eaten like a taco.
That’s the beauty of tacos and quesadillas, they have a basic preset – tortillas with or without cheese – and you can add whatever you want to them, even without a plan.
